Richard Hubbard was once over 350 pounds. After a doctor's physical and finding out he was pre-hypertensive, he decided to make changes and avoid medication. Over the course of a year, Rich lost the first 120 pounds of his incredible 150 pound weight loss. He ate healthy foods based on Dr. Joel Fuhrman's book "Eat To Live". He was mostly plant based, but switched to completely plant based in September of 2016. He also became a vegan in the process as his compassion for animals increased. He credits bodybuilder Robert Cheeke for influencing his decision of going vegan. Rich aspires to be a vegan bodybuilder and is planning his first half marathon this year.

Great Job Team! One Week Left Of The Latest Challenge!

I just wanted to give a shout out to my team. I think we did incredibly well. We came from behind and we're not far from the top. We may even win it, we'll have to see.

Mat, the Fitness Director, decided to do one more superfood, so this would be for the 9th week. This time, he chose chia seeds. This means I've had every one of the superfoods. Chia seeds are nothing new to me, I have them nearly every morning at breakfast. It's full of protein and omega 3. It's a choice that I can't argue with!

Weeks 7 & 8 Superfoods Are… Garlic & Dark Chocolate!

Mat chose the perfect foods for the last two weeks of the challenge! I do have these foods often and they are so healthy for you.

Garlic is considered a natural antibiotic. It has so many health benefits, from lowering blood pressure to raising the HDL (good cholesterol) and lowering the LDL (bad cholesterol). It helps reduce cancer risk, aids in weight loss and can reduce inflammation and pain in the body.

Strength Training Update: Working Hard, Getting Lean!

WOW! This had to be the most intense workout yet! My trainer told me right away today that he was gonna beat me up! He wasn't kidding, it was a challenging workout. If this doesn't flatten my abs, nothing will!

My trainer checked my body fat percentage and I lost between two to four mm in my abs. That means I'm getting leaner, more muscle! My chest and legs are very close to lean. I know my legs feel incredibly strong, definitely my strength is in my legs! He still wants my body fat percentage to go down and the weight will fall into place. I do think the abs are tightening but I probably obsess about it too much. The hard work is paying off though.

It's Been A Year Since I Ate Beef!

You might be wondering, why would anyone want to give up beef? It's an excellent source of protein and it's such a big part of the American diet.

Well, the problem is that store bought beef is more than likely full ofn growth hormones and antibiotics. I know people say you can have beef from grass fed cows. That's true and I would do that if it weren't for one thing… I don't really miss it.

Weeks 5 & 6 Superfoods Are… Kale & Coconut Oil!

Mat announced the super foods for the Fitness Commitment challenge weeks five and six.

Kale was for week five, and what an awesome choice that was! Kale is one of the most nutrient dense foods out there. It is one of nutritarian Dr. Fuhrman's favorite food choices. You should have kale everyday! Kale lowers your risk of cancer and supports your body's detoxification system. It has Vitamin A, Vitamin C and is very high in Vitamin K, which any Americans often lack. Vitamin K is essential for bone health and brain function.
